Hi there! I definitely do have a few birds. hehe. They're wonderful companions, and I love talking about them all the time, so if I ever ramble a bit... that could be why. However, I'm dashing out the door right now but I wanted to answer your questions. :) While you can potty train a bird, I'd recommend against it. Birds, unlike us, cannot hold their poo/urates so when they're asked to hold it, it can cause problems (backing up, etc). Some of my birds have "self" potty-trained, simply because when they poop on me or others we react as we would normally with a solid EW. lol But occasionally, they do get it on us, as it's not a forced/trained behavior.
I can't speak on behalf of canaries all that well, but they're more of a skittish bird. If you wanted a cage-friend (a bird to watch, listen to, and have around) I'd recommend a canary or two finches. But if you're looking for a good companion-bird (one who will hang out with you, potentially talk, often do tricks) I'd recommend a parrot. :)
