Were Gallant still in his younger years, he would go back to fighting and defending his town. Age and old injuries, however, have not been kind to him, and he's long since accepted that the fighting life is not for him.
Regardless, he's a humble old roo with dozens of stories to tell, and who settled in to Olde Foxbury for the easier way of life. When he's not tending to crops, he's probably out bathing in a sunny spot, trading tips on how to maximise a crop's output, or visiting his many grandchickens.
He kisses plants in his free time.
